The umu or underground oven is loaded with chicken, pork and beef pieces and placed over hot coals that have been burning down for a few hours, it will all be covered with leaves, sheets of iron and plastic and the heat generated will cook the food. Tens of thousands of meals have been provided for Tongans who have arrived from all over the Pacific during the state funeral and continued ceremonies following the death of the late King of Tonga Taufa'ahau Tupou1V.
